I’ve been eating clementines and oranges, which are such a treat when it’s cold outside and I need the strong sweet fragrance of an orange or a clementine to boost my mood when I’m feeling a little run down. All of this is what ultimately led me to make an orange honey butter with fresh rosemary. We had a nice loaf of sourdough bread, and I wanted a compound butter that was bright and embodied fresh and sweet flavors. I pulled out the mixer and immediately set about making the dream orange butter I was craving. I have no regrets, it was everything I wanted and worth the effort!
About the Oranges
We have a variety of oranges in the house right now. While the growing season is long, winter is considered peak season. We have some Cara Cara navel oranges, which have a beautiful red-pink pigmentation to the fruit and the characteristic bright orange peel. This variety of orange is sweet, and I used the juice and zest of this variety for this recipe. That said, any type of orange you enjoy can be used to make this compound butter.
Recipe Notes
It would be reasonable to use 2 tablespoons of honey instead of 1/4 cup of honey. I went for 1/4 cup here, and I’m not sorry because it is delicious; however, you may need to mix all of the ingredients a bit longer to make sure it is combined if you use a larger quantity of honey. Additionally, give yourself a moment to enjoy the scent of the orange as you zest it!
Enjoy the orange honey butter with warm bread, muffins, or rolls, and it makes a great addition to breakfast or brunch!
