Easy recipes that require few ingredients are a great thing to have at the ready. It rained over the weekend, and I was craving something simple and warm as a treat. I wanted the comfort of an apple pie, I wanted to use few ingredients, and I wanted the treat to be super quick and easy to make for brunch. That is when it came to me—easy baked apples with streusel topping!
This is the sort of unfussy, simple recipe that can be customized to what you have on hand. This recipe is flexible and does not require a lot of effort. I love this recipe because it is delicious and simple!

I sliced up a few apples, added some maple syrup, and mixed up the streusel topping—that’s it—so easy! This is as warm and comforting as I imagined it to be. I used gala apples, but another sturdy apple that holds up to baking works too. You can even use pears if that is what you have available! I mixed in dried cranberries, but you can use another type of dried fruit or other ingredients like slivered almonds. You can even substitute the maple syrup for honey or top the baked apples with vanilla ice cream. This recipe lends itself to creativity!



Easy Baked Apples with Streusel

Ingredients
- 4 apples, sliced
- 4 to 7 tablespoons of butter (softened; I used 7 tablespoons)
- 3/4 cup flour
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon cardamom
- 2 tablespoons pure maple syrup
- 1/4 cup dried cranberries (optional)
Directions
- Preheat oven to 400 F. Grease baking dish and lay sliced apples in the dish in an even layer.
- In a mixing bowl, combine the flour, brown sugar, ground cinnamon, salt, and cardamom. Cut in the butter, one tablespoon at a time, until the mixture becomes coarse crumbles.
- Drizzle maple syrup over the apples. Sprinkle the streusel topping over the apples and top with dried cranberries. Bake for 25 to 30 minutes or until apples are soft and easily pierced with a fork. Best served warm, enjoy!
