Blueberry Lemon Smoothie

The blueberry lemon smoothie is a lifesaver because my oldest son is a picky eater, and my youngest son will eat just about anything. What do they both love? Blueberries. What do we also love? Blueberries. So it’s a win for everyone. The blueberry smoothie is refreshing and filling, so everyone is full and happy. It’s even better if you serve it with a small smorgasbord of additional fruit and granola, which is usually my preference!

As much as we do love bread, chocolate, and cheese, we also love fresh fruit. Apples and blueberries are a favorite in our house. Smoothies are a great option when you crave fresh fruit and something easy to make.

Fruit

I like to use frozen fruit in my smoothies. This can be fresh fruit that I have taken the time to freeze, or it’s store-bought frozen fruit. For this recipe, I used fresh blueberries and bananas that I had frozen ahead of time. I like to buy fresh fruit for the kids, but if they aren’t eating it as quickly as I anticipate, I will often freeze some of it for smoothies. However, we also often use store-bought frozen fruit because of the convenience. I find the fruit blends easiest if it is frozen in one-inch chunks or smaller. Anything larger may create more of an obstacle for your blender.

Milk

I recommend using your preference here. We use milk or water; however, a milk alternative is another great choice. For example, almond milk or oat milk will work as well. This is a great way to customize the smoothie to your taste.

Vegetables

At times, we like to take a handful of kale and sneak it into the smoothie. We do this because our boys don’t know the difference and it is another serving of vegetables for all of us. That said, if you decide to add a leafy green to your smoothie, you will want to add it in between the liquid and the frozen fruit.

Blender

When you add your ingredients to the blender it is important to consider the placement and order of the ingredients. Keeping this in mind can help produce better results when you blend all of the ingredients together. If you are using a conventional countertop blender, you will want to add the liquid, greens (e.g., kale), then frozen fruit. If you are using a blender that is inverted (e.g., the NutriBullet, where the container needs to be flipped over before attaching it to the base), you will want to add the ingredients so they are still in order once the container has flipped over. In this case you would add the frozen fruit first, then the greens, then the liquid.

Blueberry Lemon Smoothie

Makes 2 servings

Equipment

  • Blender
  • Zester (optional)

Ingredients

  • 1/2 to 1 cup of milk or water
  • zest of 1 lemon (optional)
  • 1/4 cup lemon juice
  • 1 and 1/2 cups of frozen blueberries
  • 1 to 2 frozen bananas (peeled)

Directions

  1. Place the milk or water, lemon zest, lemon juice, blueberries, and bananas in the blender. Give the blender a few pulses on low to get the smoothie started. Then blend for about 30 seconds until smooth. Serve and enjoy!
